chocolate covered popcorn.

chocolate covered popcorn is one of my all-time favorite snacks. it combines sweet and salty in one without going overboard. growing up in jacksonville, there has to be one definitive moment where you encounter peterbrooke chocolatier. in all my years, i have never come across anything that comes near the famed chocolate covered popcorn. that is until now.

let me introduce to you my spin on chocolate covered popcorn.


ingredients:
1 bag of microwave popcorn. i use the orville redenbacher butter.
1 cup of nestle milk chocolate chip morsels


how to:
1. microwave bag popcorn.
2. on a cookie sheet, in a single layer, spread out cooked popcorn. i use wax paper on top of the cookie sheet for easy clean up.


3. in a microwave safe dish, use 1/2 to 1 cup of chocolate chip morsels. microwave on high for 1 minute.


4. stir morsels to break up shape.
5. using a spoon, drizzle melted chocolate over popcorn.*


6. let sit 8hours or until chococlate has hardened.


*depending on how much chocolate you desire, you can have thick clumps of chocolate or just a light drizzle.

not your everyday sandwich

growing up, my mom never packed me peanut butter and jelly sandwiches for lunch. instead, i had grilled cheese sandwiches via the nonstick sandwich maker! there i would be at the young age of 5, breaking out my foil wrapped sandwich, unveiling perfectly toasted, triangle shaped grilled cheese sandwiches, cooked 4 hours earlier, thus leaving me with soggy bread and cool cheese. this lasted for years. so in your face you standard run of the mill children eating your PBJ sandwiches with the crust cut off!


when i was old enough to make my own sandwiches, i started making the standard sandwich with deli meat, bread, cheese and condiments. i kept this up all throughout high school. after years of eating the same sandwich day in and day out, i became adverse to sandwich meat. not even can boar's head tempt me to go back to eating standard sandwiches. so i got creative.


allow me to introduce to you my grown-up sandwich.


ingredients:
tortilla
apple
tomato
goat cheese*
shredded mozzarella cheese*
baby spinach
chopped pecans
salt and pepper

how to:
1. lay out your tortilla
2. using only half the tortilla, sprinkle mozzarella cheese
3. add spinach on top of the cheese
4. slice apple and place slices on top of spinach
5. sprinkle goat cheese and chopped pecans
6. add salt and pepper to taste
7. fold over tortilla and toast till cheese is melted. approximately 5 minutes.


*you can substitute any of the cheeses for your preference.

Welcome to 700 Miles of Recipes.*

This blog is created by Pam and Mary to showcase their easy and delicious recipes.

We grew up in the sunny state of Florida and both have a passion for cooking, experimenting with different ingredients, and most importantly eating!

We have created this blog in order to keep track of some of our favorite dishes. One day, we aspire to open our own little restaurant and to cook for our family, friends, and new faces we have yet to meet.
